End-of-Season Recipes from the Corner Patch Garden

Fall may be approaching fast, but summer’s not over just yet… At Cornerstone Homes, we believe in soaking up every last drop of the season, and there’s no better way to do this than by enjoying the delicious summer and fall foods that grow in our Corner Patch Gardens!

Corner Patch Garden Event

Our homeowners have had so much fun at the monthly garden social mixers this summer. They have experienced and learned how to harvest fresh veggies and tasted some healthy and unique dishes straight from the garden. We want to share a few of our favorite recipes with you.


Watermelon Salad

Corner Patch Garden Watermelon Salad

Ingredients:

  • 1/2 medium-sized watermelon
  • 1/2 cup of arugula 2 oz of mint or basil
  • 8 oz of feta cheese
  • Balsamic vinegar Olive oil

Directions:

Cube watermelon by slicing in half and then slicing wedges out of the flesh. Crumble feta and spread over the bowl of cubed watermelon. Add fresh arugula leaves, mint and/or basil. Mix balsamic vinegar and olive oil together. Shake vigorously and pour over salad.

 


Sweet Pea Mayo Dip

Cornerstone Cooks Recipe Sweet pea Garden Summer

Ingredients:

  • 1 cup of fresh sugar snap peas (frozen peas work as well!)
  • 6 oz of organic mayonnaise
  • Salt and pepper Soy sauce

Directions:

Puree sugar snap peas in food processor or mottle them by hand. Add mayonnaise, soy sauce, and salt and pepper. Vigorously mix all ingredients together until uniformly blended. Serve with fresh veggies, chips, or anything dippable.


Fresh Zucchini Salad

Zucchini Vegetable Cornerstone Homes Recipe

Ingredients:

  • 1 zucchini
  • 1 cucumber
  • 1 tomato
  • 1/4 head of cauliflower
  • Apple cider vinegar
  • Olive oil
  • Salt and pepper
  • Oregano
  • Pepper flakes

Directions:

Using a food processor or spiralizer, slice zucchini and cucumber into super thin slices or spirals. Cube tomato Rice cauliflower (by hand or with a food processor.) Mix all ingredients together until cauliflower covers all ingredients. Make the dressing with olive oil, apple cider vinegar, and seasoning Serve cold or stir-fry the entire mix.
